IRCTC & QCI to Start Indian Railways Catering Audit
Indian Railways enlists QCI for unannounced catering and sanitation audits to ensure high food safety and hygiene standards for all passengers.

In a major move to enhance passenger experience and ensure food safety, Indian Railways has partnered with the Quality Council of India (QCI) to launch a rigorous Indian Railways catering audit program. This initiative is designed to implement strict oversight on catering and sanitation standards across both trains and railway stations.
Unannounced Inspections and Digital Evidence
To maintain high standards of cleanliness and food quality, certified teams from the QCI will conduct unannounced audits every three to six months. This surprise inspection mechanism ensures that catering services remain compliant with hygiene protocols at all times, rather than just during scheduled checks.
The audit process will be highly transparent, utilizing digital tools to prevent any tampering with reports. Auditors are required to collect empirical digital evidence, which includes:
- Geo-tagging: To verify the exact location of the inspection.
- Time-stamping: To provide an accurate record of when the audit occurred.
- Photographic Documentation: Comprehensive photos to document the real-time condition of facilities and food.
Following each inspection, auditors are mandated to submit a formal report within a strict 24-hour window to ensure rapid response to any issues found.
Strict Adherence to FSSAI and Hygiene Standards
This oversight program is the result of a Memorandum of Understanding (MoU) signed between the Indian Railway Catering and Tourism Corporation (IRCTC) and the QCI. The primary goal is to ensure that all food services meet the stringent requirements set by the Food Safety and Standards Authority of India (FSSAI) and international cooking standards.
The audits will specifically focus on several critical areas of food service and hygiene, such as:
- Staff Hygiene: Ensuring personnel follow proper grooming and sanitation protocols.
- Pest Control: Verifying that effective measures are in place to prevent infestations.
- Temperature Maintenance: Checking that food is stored and served at safe temperatures.
- Material Segregation: Ensuring the strict separation of vegetarian and non-vegetarian raw materials to maintain dietary integrity.
Consequences for Non-Compliance
The initiative is a direct response to passenger grievances regarding the quality of food and cleanliness on the railways. By introducing independent, third-party monitoring, the Indian Railways aims to hold service providers to a much higher standard of accountability.
Any irregularities or failures identified during these audits will trigger immediate punitive actions. Depending on the severity of the violation, consequences may include:
- The imposition of significant fines on the service provider.
- The permanent termination of catering contracts.
